Beef and red pepper stew


800g lean stewing beef all fat removed
3 garlic cloves (Deb used lazy garlic)
2cm root ginger peeled and grated (I used ground)...
1tsp ground cumin
1tsp corriander (Deb didnt use it as she hates the stuff)
1 tsp medium curry powder
4 red pepper deseeded and cut into large pieces
2 large onion peeled and cut
400g passata
800ml beef stock
1 cinnamon stick
2 cloves
3 cardamon pods lightly crushed
Salt and pepper freshly ground
Fresh corriander to serve if required

Place beef in heavy based saucepan with garlic cumin corriander curry powder peppers and onion.
Stir in passata and stock and add cinnamon stick cloves and cardamon pods. Season well and bring to boil over high heat.
Cover tightly , reduce heat to low and cook gor 2-2.5 hrs or until beef is tender.
Remove cinnamon stick and garnish with corriander.
