Food is an important part of my life, I LOVE pottering in the kitchen and enjoy good meals with my husband, friends and family. This is a record of bits and bobs I have used which I hope will help others, whether to lose weight, experiment with some recipes, find healthy alternatives to food favourites or just have fun in the kitchen. My journey was not a lonely, uninspiring one, it was down to the wonderful family who supported me and my awesome friends at Slimming World

Beetroot Trifle
My trifle experiment ! Sugarfree raspberry jelly with pomegranete seeds, raspberries and the beetroot twist as a base. Instead of blancmange I dissolved another jelly packet with a tub of fat free yoghurt. Top - instead of cream I used quark. One of the most controversial dishes I have ever made! People are still talking about it - and not for the right reasons! The beetroot needed to be finely chopped, even grated. I will not give up! Watch this space!
Baked apple cheesecake.
Like many of my SW pals I am a fan of the M&S baked Apple Yoghurt. Take 1 m&s baked apple yoghourt. Dissolve sweetener in one teaspoon of boiling water add to yoghurt. Whisk in 3 beaten eggs.....cook at 200 for 30 minutes or until firm to touch, and chill. Grate over some fresh apple and add raspberries. Produced 10 of these miniatures. Awesome
Desserts, Syn free pancakes : Cheesecakes, Raspberries,
I did these one Pancake Tuesday!
Whisk 1 egg white till stiff, add sweetener. Stir 1 vanilla essence drop into yolk & fold into egg white. Fry light - cook till set then flip over. Serve with raspberries + spoonful of fat free greek yoghurt + 1 tablespoon water to thin out yoghurt! LUSH!
More traditional looking - suitable for any sceptics!
Whilst I DONT have a sweet tooth I can eat pancakes for England, but that wouldn't do my diet any good. This version however is totally Fat Free! I ate mine with lemon juice and sugar substitute!.
You need....
3 Eggs
2-3 Teaspoons sweetener (depending on own taste)
3-4 Drops of vanilla essence
Seperate the white from the yolk and put into separate bowls, Whisk the egg white until fluffy and add the sweetener,
In the other bowl add the vanilla essence then fold the yolk into the egg white.
Heat a frying pan with frylight, add the mix and spread as you would a normal pancake (i made two out of this recipe) after a few mins flip over.
You could add any fruit or yoghurt for instance to make it how you like it
Take 1 m&s baked apple yoghourt. Dissolve sweetener in one teaspoon of boiling water add to yoghurt. Whisk in 3 beaten eggs.....cook at low heat for a couple of hours and chill. Grate over some fresh apple and add raspberries. Produced 10 of these miniatures. Awesome
