Omlette take

Develped from the scrambled egg "faff" this was more successful! Grated a couple of carrots, chopped up an onion and cooked off in a hint of olive oil and added water - cooked till water absorbed and stirred in a tin of tuna. Meanwhile beat a couple of eggsand 2 large tablespoons of fat freeyoghurt. Stirred altogether and cooked on hob for 4 mins then transferred to grill! Lovely xx Was quite substantial so just had a portion with salad and had for lunch and tea.

Could adapt this for a breakfast but would add spring onions, tomatoes and lean cooked bacon.

Soup

I always have a salad box on the go lasts 1 day at its best sometimes stretches over- there was a good amount so I removed the high water content stuff ie tomatoes and cucumber blasted the rest with a couple of know veg stock cubes and some water - absolutely awesome! Will defo be a favourite with me! Added a good amount to a curry I have on the go instead of a tin of chopped tomatoes - gave it all a different taste

Vegetable tartlets

Use any left over cooked vegetables. I chopped up some potatoes, sprouts, tomatoes and mixed in a couple of beaten eggs. I wanted to add spices so I cooked the red onion firsttogether with the curry spices in order to cook the spice. Very enjoyable - another way to get the sprouts out there!

Stuffed Tomatoes

Sometimes when I have made a quiche there is some filling left over.

I added extra veg and had enough for 1 large beef tomato.

Scoop out the insides first and mix into the quiche mixture.

Cook on a low heat until the mixture sets. Then chill as there is quite a lot of liquid in the filling.

Fishcake Quiche

Continuing with my fish week - all ready for tomorrow. Had 2 fishcakes chilling so crumbled up and added the usual culprits for a crustless quiche - beat 5 eggs added 1 quark and 1 fat free cottage cheese. Some rocket and whatever was left in my salad box! A great idea for breakfast - with a poached egg!
