Lemon, ginger juice to get me started!

Breakfast - Bit of a disaster with the egg omlette idea most of it stuck to the pan.
Shitake mushrooms and lean ham

Peckish around 4.30 so had a beef olive made with pease pudding and salad

Wednesday 1st November

I have never been a breakfast type of person. I never have been really I think it came about when I was in my first teaching job in Nottingham and had to get up really early to catch the first of 2 busses to get to school. When we go away and are staying in a hotel I will go for poached eggs and where available smoked haddock or salmon.

I don't have a sweet tooth- in fact the opposite. I can quite happily eat a grapefruit or even a lemon.
A few weeks ago I came across a suggestion for lemon, fresh ginger and apple blitzed into a juice.
I tried it but ditched the apple and now enjoy this as a really vitalising start to the day!
Today it was half a lemon and about 1.5 inch of ginger.
Sieved with my Bing personalised kitchen utensil!

Tomatoes on Toast take

Tea tonight. Mixed tin of pease pudding with a beaten egg flattened into circle and grilled. Topped with well done tomatoes cooked in slow oven and worcester sauce for a kick!

Kippers, poached egg

I LOVE kippers - they always seem to come with butter in the packet so I remove the butter and cook as directed. Love having with poached eggs.

Omlette take

Develped from the scrambled egg "faff" this was more successful! Grated a couple of carrots, chopped up an onion and cooked off in a hint of olive oil and added water - cooked till water absorbed and stirred in a tin of tuna. Meanwhile beat a couple of eggsand 2 large tablespoons of fat freeyoghurt. Stirred altogether and cooked on hob for 4 mins then transferred to grill! Lovely xx Was quite substantial so just had a portion with salad and had for lunch and tea.

Could adapt this for a breakfast but would add spring onions, tomatoes and lean cooked bacon.

Fishcake Quiche

Continuing with my fish week - all ready for tomorrow. Had 2 fishcakes chilling so crumbled up and added the usual culprits for a crustless quiche - beat 5 eggs added 1 quark and 1 fat free cottage cheese. Some rocket and whatever was left in my salad box! A great idea for breakfast - with a poached egg!
