Mackerel week!

 

It started with the mackerel pate!

 I LOVE mackerel pate so when I saw a SW recipe I decided to try it. 

I was very sceptical as I have never used a crab stick before.

 The recipe was :-  "One tin of mackerel in sweet chilli sauce or could be tomato sauce,

 8 seafood sticks and a good dollup of quark/ fromage frais/cottage cheese.

 And season to taste. Blitz in a processor or stick blender. Makes a lot! "

                                       

I gave it a try- and indeed it made quite a lot. We had it as a starter and I had lots left over.   

Faced with a HUGE amount of left over mixture I chilled it overnight and had a think!
Sunday morning saw me banging out scotch eggs - 8 in all. 
I soft boiled Agnes's eggs which are quite
small and coated them with the mixture.
Yes messy little job!
I had added a beaten egg to the mixture and so there wasn't any unecessary 
faffing about with breadcrums.
I placed the would be scotch eggs under the grill as I wanted them to crisp up.
Having grilled one side I had to leave them cool slightly so I could flip them over and grill.
Once chilled I tried one - OUT OF THIS WORLD! I served with a salad and was so thrilled I 
popped round to a fellow SW member and good friend! I left one for both her and her daughter.
She ate them both! Need I say more!



On Monday I was still in fish mode so I knoked up a couple more mixtures 

- one with the mackerel etc and added spring onions and some 

chopped tinned new potatoes I had in the fridge!

The other mixture I experimented with the same quantities 

but using tinned sardines in tomato sauce.





I made 12 of each in the silicon moulds. Again the taste was amazing and  I shared with 

fellow SW pals - they loved them! 


I used some of the left over sardine mixture and mixed it with some Aldi Golden Rice (free) 

and added some green lentils and salad. Very filling and enjoyable.

I had a few fish cakes left - both mackerel and sardines.

 


I had made up a basic vegetable soup using pease pudding and veg stock cubes. 

I used the sardine cakes instead of bread. Very nice, definitely a substitute for bread.

The mackerel ones (oh I had added some cooked kippers) I added to the soup 

and gave it a quick blitz! Best chowder ever!


Following day I baked a potato and scooped out the inside, mixing it with one of the 

mackerel/kipper cakes. I added some quark and seasoned well. Served with salad.
