2 eggs
Vanilla extract
2 teaspoons of sweetener
Fresh fruit of your choice
Spray Oil
Method
Separate an egg into two bowls – white and yolk.
Whisk the white and add 2 tsp sweetener , whisk until meringue-ish
Add some vanilla essence to the yolk and mix together
Add the yolk to the white and fold together – this is your batter.
Frylight a pan and add half of the batter, spreading it gently with the back of a spoon.
Leave alone until you can slide a fish slice underneath then carefully turn it over to cook the second side. Repeat with the other half of the mixture.
Serve with a fresh fruit of your choice on top (I used raspberries and banana) Experiment with your toppings, you could just used some fresh lemon juice and sweetener for no syns or just fresh fruit.
